Hoy viajamos hasta Suecia para preparar uno de sus platos más representativos: las Köttbullar, las auténticas albóndigas suecas. Aunque muchas personas las conocen gracias a IKEA, esta receta forma parte de la cocina tradicional sueca desde hace generaciones y sigue siendo uno de los platos más habituales en los hogares del país.
Su combinación de carne, salsa cremosa, puré de patatas y mermelada de arándanos rojos crea un equilibrio de sabores que sorprende a quien la prueba por primera vez.
¿Qué son las Köttbullar?
Las Köttbullar son pequeñas albóndigas elaboradas normalmente con una mezcla de carne de ternera y cerdo. Se condimentan con cebolla, pan rallado, huevo y pimienta de Jamaica, un ingrediente que aporta su característico aroma.
A diferencia de las albóndigas españolas, las suecas suelen ser más pequeñas y siempre se sirven acompañadas de una salsa cremosa, puré de patatas y mermelada de arándanos rojos (lingonberry), una combinación típica de la gastronomía escandinava.
Ingredientes
Para las albóndigas
- 250 g de carne picada de ternera
- 250 g de carne picada de cerdo
- 1 cebolla pequeña rallada
- 50 g de pan rallado
- 100 ml de leche
- 1 huevo
- ½ cucharadita de pimienta de Jamaica
- Sal
- Pimienta negra
Para la salsa
- 30 g de mantequilla
- 30 g de harina
- 500 ml de caldo de carne
- 100 ml de nata para cocinar
- 1 cucharadita de mostaza Dijon
- Sal y pimienta
Cómo preparar las auténticas albóndigas suecas paso a paso
Paso 1. Hidratar el pan rallado
En primer lugar, mezcla el pan rallado con la leche y déjalo reposar unos minutos. Mezcla el pan rallado con la leche y deja reposar durante unos minutos.
Paso 2. Preparar la mezcla
A continuación, añade la carne, la cebolla rallada, el huevo, la pimienta de Jamaica, la sal y la pimienta. Mezcla hasta conseguir una masa uniforme.
Paso 3. Formar las albóndigas
Después, haz pequeñas bolas del tamaño de una nuez para que todas se cocinen por igual.
Paso 4. Dorarlas
Una vez preparada las albondigas, fríelas en mantequilla a fuego medio hasta que estén doradas por fuera y cocinadas por dentro.
Paso 5. Preparar el roux
Mientras tanto, en otra cazuela derrite la mantequilla, añade la harina y cocina durante un minuto removiendo constantemente.
Paso 6. Preparar la salsa
Seguidamente, añade poco a poco el caldo de carne mientras remueves para evitar grumos.
Paso 7. Terminar la salsa
Por otro lado, incorpora la nata y la mostaza Dijon. Cocina unos minutos hasta obtener una salsa cremosa.
Paso 8. Añadir las albóndigas
Finalmente, Introduce las albóndigas nuevamente en la salsa y cocina unos minutos más para que absorban todo el sabor.
Paso 9. Servir
Por último, sirve las Köttbullar con puré de patatas y mermelada de arándanos rojos. Si no encuentras esta mermelada, la SYLT LINGON de IKEA es una excelente alternativa.

Today we’re taking you to Sweden to prepare one of its most iconic dishes: Köttbullar, the authentic Swedish meatballs. Although many people know them from IKEA, this traditional recipe has been enjoyed in Swedish homes for generations and remains one of the country’s favourite comfort foods.
Served with a rich creamy gravy, fluffy mashed potatoes and tangy lingonberry jam, Swedish meatballs are the perfect balance of savoury and sweet flavours.
What are Köttbullar?
Köttbullar are small meatballs traditionally made with a mixture of beef and pork. They are seasoned with onion, breadcrumbs, egg and allspice, which gives them their distinctive flavour.
Unlike many other meatball recipes around the world, Swedish meatballs are usually smaller and are always served with creamy gravy, mashed potatoes and lingonberry jam.
Ingredients
For the meatballs
- 250 g ground beef
- 250 g ground pork
- 1 small onion, grated
- 50 g breadcrumbs
- 100 ml milk
- 1 egg
- ½ teaspoon ground allspice
- Salt
- Black pepper
For the gravy
- 30 g butter
- 30 g plain flour
- 500 ml beef stock
- 100 ml double cream (heavy cream)
- 1 teaspoon Dijon mustard
- Salt and black pepper
How to Make Authentic Swedish Meatballs
Step 1. Soak the breadcrumbs
Combine the breadcrumbs with the milk and let them soak for a few minutes until softened.
Step 2. Prepare the mixture
Add the ground beef, ground pork, grated onion, egg, allspice, salt and pepper. Mix everything together until well combined.
Step 3. Shape the meatballs
Roll the mixture into small meatballs, about the size of a walnut, so they cook evenly.
Step 4. Brown the meatballs
Cook the meatballs in butter over medium heat until they are golden brown on all sides and fully cooked. Remove and set aside.
Step 5. Start the gravy
In the same pan, melt the butter, add the flour and cook for about one minute while stirring continuously.
Step 6. Add the stock
Gradually pour in the beef stock while whisking constantly to create a smooth, lump-free gravy.
Step 7. Finish the gravy
Stir in the cream and Dijon mustard. Simmer for a few minutes until the gravy becomes smooth and creamy.
Step 8. Return the meatballs
Add the meatballs back into the gravy and let them simmer gently for a few minutes so they absorb all the flavour.
Step 9. Serve
Serve with creamy mashed potatoes and lingonberry jam. If you can’t find lingonberry jam, IKEA SYLT LINGON is an excellent alternative.
